As a new parent, you may find that one of the challenges is enjoying a cup of coffee while it’s still hot. There’s no shame in that microwaved coffee game (we’ve all been there!), but this pumpkin spice latte, made with real pumpkin, is so good you won’t want to put it down until it’s gone.
Pumpkin is packed with Vitamin A, which aids with immunity, vision, the reproductive system and more. This orange member of the winter squash family also contains iron, potassium and fiber – making it a great addition to your diet whether you’re pregnant or in the postpartum period. Grab your favorite mug and enjoy this truly delightful, healthy version of fall’s most iconic drink.
Ingredients
(Makes two full mugs)
-2 tablespoons pumpkin puree
-1 ½ cup milk of choice
-1/2 cup heavy cream
-1 tablespoon honey
-1 tablespoon maple syrup
-1 tablespoon vanilla extract
-1/2 teaspoon pumpkin pie spice
-1/2 cup hot coffee
Preparation
-In a saucepan, heat pumpkin puree, milk, heavy cream, honey and syrup over medium heat. Do not boil.
-Whisk until bubbles form and once hot, remove from heat to stir in vanilla extract, pumpkin pie spice and coffee.
-Pour into your favorite mug, relax and enjoy.
Notes
-To make this an iced pumpkin latte, substitute hot coffee for cold brew or coffee that has cooled to room temperature. Combine all ingredients using a blender and pour over ice.
-Heavy cream can be omitted but it does make for a creamier, more full-bodied latte.
-Get creative with your add-ons! Collagen or protein powder, MCT oil, cinnamon and whipped cream are all great options
